Pappardelle is definitely my favorite pasta of all time (although fazzoletti is a very close second) and I’m always looking for an opportunity to use it. Last week, I took a few lobster mushrooms from the bag of goodies, chopped it up, and made this creamy bowl of deliciousness for dinner:
Lobster mushrooms + creamy sauce + pappardelle = YESSSSS.

- Went to a fancy steak restaurant because my husband isn't vegan and he goes to enough vegan restaurants with me that he deserves a treat too. They didn't actually have any vegan dishes on the menu but brought me so many different bowls of veggies; bread, bok chocolate and mushrooms, sweet and sour peppers, roast potatoes, red cabbage and aubergines. Really was too much food for me to even attempt to finish
- Pepper, courgette and aubergine pasta when somewhere else didn't have any vegan options
- Back in the steak restaurant because the meal was SO good and this time I had a salad, bread, peppers and potatoes
- Curley fries
- Bruschetta and grapefruit juice
- Biscoff cupcake 😍😍
- More bruschetta
- A potato and pepper dish (forgot what it was called)
- A super cute glass from the steak restaurant (probably will buy myself a set when I get home because they were so CUTE)
So lots of yummy food but an abundance of carbs and veggies and a distinct lack of protein. I also didn't have too many salads or juices or ice creams because I'm pregnant and super paranoid about listeria
