Monggo Bread

There are different types of bread you can buy in any local Philippine bakery. One of the most common bread aside from the regular white bread is Monggo, or munggo loaf. This soft bread is filled with monggo (mung bean paste) which is sweet and great with coffee or tea.

For this recipe, instead of placing the dough in a loaf pan, I made it in a wreath shape using a 2 strand braid. See my instructions below.

Ingredients

Dough
  • 2¼ tsp dry active yeast
  • ¼ cup water, warm
  • 4 cups flour
  • ½ cup sugar
  • 1 tsp salt
  • 1 cup milk
  • 1 egg
  • 2 cups munggo filling
  • 1 egg (eggwash)
  • icing sugar (optional) for sprinkle
Monggo Filling
  • 1 cup uncooked monggo red beans
  • ⅓ cup sugar
  • ¼ tsp salt
  • 3 tbsp shortening
  • 3 cups water

Instructions

Dough
  1. Dissolve yeast in warm water and 1 tsp sugar. Set aside.
  2. In a bowl combine salt, sugar and 2 cups flour.
  3. Add the milk, egg and yeast mixture. Blend well.
  4. Then add the remaining 2 cups flour. Mix well until the dough become smooth.
  5. Put in a greased bowl and cover with plastic or cloth for an hour until it doubles in size.
  6. Punch down the dough and roll out to 6x10 inch rectangle.
  7. Spread the munggo filling.
  8. Roll like a jelly roll.
  9. Divide into 2 logs.
  10. Braid the logs by pinching the top part together. Then twist one strand to the other strand.
  11. Make a circle. Cover with towel for another 30 minutes.
  12. Preheat oven to 350°F. Brush the dough with egg wash.
  13. Bake for 30 minutes. Let it cool.
Monggo Filling
  1. Wash monggo beans and soak overnight.
  2. In a saucepan, boil 3 cups of water and place beans. Cover pan and let it boil for 30 to 45 minutes until soften.
  3. Placed the beans in a blender, then add sugar, salt and shortening. Let cool before using.

  5. In a bowl, combine all purpose flour, salt, oil and water. Mix everything with your hands. Set aside.
