Create your own special desserts or homemade soaps with the Freshware SM-107RD 15-Cavity Silicone Small Caneles and Bordelais Fluted Cake Mold. This mold is constructed with 100% pure, professional quality food-grade silicone, which meets US FDA and European LFGB safety standards (BPA, PVC and Phthalate FREE). Simply pour your favorite recipe in the mold, prepare, and cool completely. Then turn it upside down, this flexible silicone mold offers a non-stick surface that allows the baked goods to pop right out with a little push from the bottom. Remember to place the silicone mold on a baking sheet for easier positioning and removal.

Make canelés at a fraction of the price of metal molds!
I've been experimenting with French pastries and desserts, and came across some recipes for caneles. After doing my research and finding out that the traditional metal/tins were EXTREMELY expensive, I really wasn't ready to make that kind of investment in a baked item I was just experimenting with.That's why I'm glad I found these silicone ones on Amazon! At a fraction of the cost of the metal molds, I felt these were a great deal. Having never owned any silicone bakeware previously - again, I did my research on how to use them and maintain them. My first try at the canelés wasn't exactly perfect, but I'll chalk that up to "operator error" as I don't think I left them in the oven long enough to really get that 'burnt sugar' type of topping.I did feel that the baking was a bit uneven with this baking mold, as some of the cakes came out much lighter than others. I also believe that they would have had more definition had I done these in metal pans. They popped right out of the pan with no effort, so there was no sticking. (Yay!) All in all, I'm very happy with this purchase and will look for other ways to use this bakeware (plus, I vow to master this darn canelé). LOL Thanks for reading.

It is like a gift when you get a product that you had reservations ordering and turns out excellent. I had my doubts but purchased it anyway. I do not like the thought of plastic with baking, I do not even own a Silpat. I previously purchased the Du Buyer which is 3X the cost and has to send it back since I did not think it was worth that. I have sent my Christmas wish to Santa for the Matfer Bourgeat copper ones but I doubt it if Santa's workshop has a culinary section. I baked the ever difficult Cannele Bourdelais in it twice, following a popular recipe by Clotilde.
The accompanying literature says do not use in temperature over 460 but I had to set my oven to 500 F the second time around, then lowered it to 475F for a duration of 15 minutes, then on to 45 minutes more for 400F.
Not only did it hold up in those 2 times of high heat baking but it also cleaned well with hot soapy water. Mind you, I used beeswax and butter to brush the mold before baking. I have read that some people who have used silicone molds with the beeswax/butter combo had to throw out their mold due to the difficulty in cleaning - but not this one. It is a keeper, and in fact I am ordering another one to have a pair of them when I make a bigger batch of batter. What a great bargain for a great perfoming mold.

After months of buying Caneles at a a french bakery near me, I finally built up the nerve to try to make them myself. After trying several recipe's I finally settled on one from eatlittlebird's website created specifically for a silicone mold. (Google "canele recipe with silicone mold" and you'll find it) My only complaint is that the ones along the edges came out perfectly carmalized on the outside, perfectly soft/custardy on the inside, however the ones in the middle were too soft and under cooked. So after seeing someone's earlier suggestion in the comments I cut it in half, after doing so now all of the Canele's are near perfect. I can now make a batch of 30 small caneles for the fraction of what I would have spent at the bakery, and they come out perfect.

I followed the ChefSteps recipe from http://www.chefsteps.com/activities/caneles--2 .

My first batch showed a troublesome but consistent failure where one side of each canelé under-cooked (and under-browned), causing the product to collapse to the undercooked side. The shape of the mold containing eight canelés was to blame: each canelé was left pale on its inward-facing side.

Solution: cut the mold into eight individual pieces (and as an added bonus, now they stack for storage).

Now the product cooks much more evenly.

(Note: these singletons also cooked slightly hotter and longer -- 425 degrees F for 65 minutes.)

This is a great product. The cannele popped right out. I did have to let them cook longer and color darker than I would in other baking recipes. I don't know if this is the pan so much or the quality of cannele that need that long bake for the caramelization. I suggest the recipe from Cooks.com which is easy and delicious. There are a lot of recipes out there that call for melting beeswax, but who has time for that? I think I buttered and sugared this pan. Family very impressed. I copied this from a delicious treat we had from a French bakery in Salt Spring Island, BC, Canada. The baking husband and wife said the cannele were their favorite product and they were not wrong.

I found this one for a reasonable price, so I decided to go for it. It is the first silicone baking piece I have ever owned, so I was a bit apprehensive. The instructions that came with it were simple, but detailed enough for me to feel comfortable with baking with it as well as the pre-baking steps needed. I have used it many times since receiving it and it has worked like a dream. It is also convenient for washing as I can put it in the top rack of my dishwasher and forget about it. I was skeptical about buying anything made of silicone just because the idea of baking in a rubber like product seemed weird to me. I did find a recipe for canneles online that substituted silicone molds for copper cannele molds, which can run from $25 to $30 each. The author of the recipe was so satisfied with his results using the silicone molds that I was convinced to give them a try. I followed his recipe but had to adjust the temperature settings a bit lower as per the silicone mold instructions, and the canneles came out fantastic. They browned around the edges like they were supposed to and popped out of the molds whole and intact, so I was very pleased. The best part is that you don't have to pre-grease the molds. I do recommend these, and the price is very reasonable.

Está bien, te permite tener un montón de mini-canelés, pero me parece que quedan demasiado pequeños.

La foto que comparto es para comparar los tamaños. Si son mexicanos, el canelé termina siendo tamaño bocado como del dulce "tamborcitos". Yo creo que el otro es mejor, pero en cuanto a calidad, es buena.

For the price this is a good quality item. Easy to wash. Makes golden brown canelés as long as you do not exceed filling each mold at 3/4 max and that each of them has the same amount of dough in it. My French friend was impressed by the result. Most receipes will give you about 30 canelés. Buying 2 of these will save you time and energy!
