Product Description

Our organic cocoa is made with the finest organic cocoa beans, grown in the shade of rainforest trees. Potassium Carbonate is commonly added to cocoa powder to balance out the acidity and bring out the rich chocolatey aromas. This is often referred to as "Dutching" and has been used by chocolate makers for over 180 years. We buy our cocoa direct form the farmers, paying them a higher price than they would receive for conventional cocoa. The beans are harvested at the perfect point of ripeness, then carefully fermented and dried to maximise the smooth, complex flavours of this delicious cocoa.

We've been using this cocoa for about 3 years for baking and making chocolaty drinks.
The taste is always excellent. For hot drinks I don't use sugar at all any more, because the taste, despite being strong, is at the same time almost creamy and velvety.
On the other hand, now when I've tried also the Equal Exchange Hispaniola cocoa powder, I can see that this cocoa has obvious additional taste because of the acidity regulator, Potassium Carbonate. The Equal Exchange cocoa powder does not have the Potassium Carbonate in it so the taste is different, which I think is - at least partly - because of the Potassium Carbonate missing.

Still one of the best cocoa powder I can think of, highly recommended.

Organic chocolate is my choice now because of gut damaging pesticides and glyphosate Roundup etc in production of the cocoa and other ingredients. So great that Green and Black uses everything organic even the sugar. However this milk chocolate is just a bit too sweet for my taste so I changed to the Green and Black 85% cocoa which is much less sweet but which actually tastes surprisingly good and with a nice rich taste.

Smells as though someone dropped them in a vat of aniseed essence. Removed the plastic packaging and they smell, removed the paper wrapper and it still smells really powerfully. Despite the fact that this is usually my favourite chocolate the smell really changes the flavour. Can't imagine what happened to them.

Best tasting organic cocoa, probably due to the acidity regulator potassium carbonate.
Mixed with organic coconut cream ( 4 teaspoons of cocoa in one small tin of coconut cream) it makes a deliciously healthy, decadent addition to a small bowl of blueberries! You only need a couple of teaspoons of the chocolate cream on blueberries. Keep the rest in the fridge it will keep for two days and will thicken up into a lovely moose .
