After moving to the United States, Cuong Pham was hungry to recreate the tastes and smells of his childhood in Saigon. But not even the vibrant Asian markets of San Francisco offered the intensely fragrant first-press fish sauce, nước mắm nhi, that Cuong remembered from Vietnam. So in 2006, Cuong decided that if he couldn't find it, he would make it — and started Red Boat Fish Sauce. Returning to Vietnam, Cuong expanded a small, family-run facility on the tropical island of Phu Quoc.

Red Boat's fleet catches black anchovies off the coast of Phu Quoc, Vietnam.

SALT

Upon catching, anchovies are salted immediately within 15 minutes to preserve freshness.

FERMENT

Anchovies are brought back to the barrelhouse and fermented for 12 months. Each barrel holds 13 tons of black anchovies.

PRESS

After fermentation is complete, this first extraction from the barrel (called the first-press) is completed and bottled.

Preheat oven to 425 degrees. Peel and finely chop ginger. In a large bowl, combine all ingredients for meatballs. Scoop balls, the size of large walnuts, and place on a parchment-lined sheet tray. Bake meatballs until just cooked through, 10 minutes.

Red Boat is an all-natural, first press, “extra virgin” Vietnamese fish sauce. It does not contain added water, preservatives or MSG. Made from a two hundred year-old, chemical free, artisanal process, Red Boat uses only the freshest cá com (black anchovy), salted minutes after leaving the sea then slow aged for over a year in traditional wooden barrels. Red Boat anchovies are sourced exclusively from the crystal clear waters off the Phu Quoc Island archipelago. I purchased this sauce for an Asian recipe that called for fish sauce, and this one is highly recommended by professional chefs. It gives a great flavor for Caesar salads and other Asian dishes, and is the best I have used so far. I always used Squid brand fish sauce for all my dishes but then discovered Phu Quoc a few years ago. I was just turned on to Red Boat by a friend and although it is expensive, it is well worth the few extra pennies per serving. Red Boat brand has a robust flavor profile without the harshness of many of other the traditional brands. I continue to use Phu Quoc in my curries etc... that it is those mixed with many other ingredients, but if I'm doing dipping sauces or salads Red Boat is my "go to" Fish sauce. If you try this fish sauce in a side by side comparison you will understand the justification for the price difference.

I purchased a new cook book called Nom Nom with healthier paleo options and an asian spin. I had fish sauce in my fridge that I had cleaned out when I purged outdated condiments; it was probably only used for A recipe in the past. I used the Red Boat sauce for a new recipe that tasted great. I can't honestly say that it was the brand of fish sauce that made it great, but I can't say that it didn't either. I don't know the difference between other fish sauces… however as it came recommended by the author steering me toward better tasting healthy foods I conclude that it is a healthier alternative to others available. I like to think what I'm putting in my body won't hurt me later, and for that I recommend it!

I challenge you to do a taste test between Red Boat and any other fish sauce. You will be blown away. This is the fish sauce you want to be using in your cooking. The flavor is overwhelming. Other fish sauces just taste salty/fishy, this explodes with Umami and anchovy and salt. I poured out the brand-new bottle of fish sauce I had in our pantry when I did a side-by-side comparison with Red Boat.
