Product Description

This grate is Commonly used by professional chefs as a cooling rack, used for baking, decorating etc... When baking with the rack it may be helpful to brush lightly with oil to help product release. Foods such as fish sticks, tatter tot's, French fry's will crisp up better on the bottom using this grate. Other fatty foods such as bacon and other meats will drip into your sheet pan keeping the bacon from sitting in it's own grease. We do a lot of cooking and baking in our home, and much like many others throughout the world, have increased our in-home food prep exponentially due to the pandemic. I have been using other spare racks and trays to cool cookies, bread, cakes, and even for use while cooking/baking bacon in the oven or my Trager pellet grill. The spaces between the rails are too wide, though, so I had high hopes when I ordered my Great Credentials Professional Cross Wire Cooling Rack. The cross wire design creates more contact area for the food it supports, and the built-in wire ‘v’s acting as feet provide just enough elevation from the counter or other baking sheets.Upon receipt of the well packaged racks, I hand washed each rack with warm water and dish soap, even though they can be washed in the dishwasher. Despite all of the cross wires and edges around the perimeter of the racks, I did not find any of the edges to be too sharp or dangerous for myself or anyone in my family to use. The design, although effective for the intended purpose, made washing it a little tedious and my sponge was missing little pieces after my initial cleaning. This was not a problem, though, as after using a nylon scrub brush on subsequent cleanings, the combination of the two was most effective, but the sponge still best suited for reaching all of the tight corners and wire surface. Back to my initial use, where after washing, I rinsed with hot water, and then wiped it down with a dry towel, and then light both racks air dry before their first use.A few hours later, after the racks were completely dry and I was ready to start cooking, I was displeased to notice that the racks both looked dirty! After visual inspection, I could see that there was rust at and around almost every wire crossing and at the ends of the rack. I had not submerged the racks or let them sit in the water. I was able to wipe off the surface rust, but I am not sure how bad or deep the oxidation process was in the material. I have not seen this on the racks my mother uses, and I suspect that her’s are truly stainless steel. The product is advertised to be “Professional Cross Wire Cooling Racks Stainless Steel Chrome Plated to avoid corrosion and rust”. Stainless steel does not rust, and the chrome plating, if applied correctly, presumably for cosmetic reasons, should have prevented the stainless steel from coming into contact with oxygen and thus oxidizing. This is not acceptable for a product that is designed to be used for cooking, baking, drying, and other means of direct contact with food. It is noted that a light oil coating can be used to help prevent food from sticking, which it certainly does when I use avocado or olive oils, but the oil is removed when it is time to clean the racks, and the rust returns.The size and shape of the racks are perfect, when used independently or within a baking sheet. After another hand wash and cloth dry, the surface corrosion and rust seemed to be removed, sufficient that I have used the racks. This requires added time and labor to constantly make sure that I am not exposing my family to the hazardous residue. I will use these only temporarily, if at all, until I get replacement racks or find a new vendor. This is very disappointing. There have been many favorable reviews of these racks, so I hope mine was just the lemon, and others don’t experience the same as me. I gave a 2 star rating since they are sized well and they are effective at cooling, but the rust is a major problem.

Whenever baking anything in the oven that is not a Casserole, I put it on a wire rack. The food cooks so much more evenly when the air can circulate around. I also use these as a cooling rack for baked goods and a place to drain off excess oil from frying.

I've used this to cook bacon and for letting glaze drip off of homemade donuts over my half sheet pan. It fits perfectly. I thought it would be tough to clean, especially after the bacon, but it really cleans easily. The grates don't line up perfectly with the edges, but that does not bother me. The racks are sturdy. There has been no discoloration since using them in my oven.

These fit my half sheet pans perfectly. They're incredibly sturdy, almost too heavy as I have to move pans around one handed it can be a little tricky. They're great for cooking bacon in the oven though not being non-stick a bit of cooking spray (Pam for Grilling seems to work best) helps the bacon release and the racks get cleaned up. I just scrub with the rough side of a kitchen sponge and leave the soap on if they're going to sit in the dishwasher a few days before I run it. I have cooled a batch of cookies I made for a friend's birthday but mostly I just cook bacon, cherry wood smoked bacon, on these. They seem like they'll last quite a while.

I have this brand (Great Credentials), Nordicware, Checkered Chef, and USA-pan cooling racks. I recommend against buying this set of racks from this manufacturer. Why?

(1) Sharp! The welds on the GC racks are uneven, the edges are sharp, and both racks have an appalling amount of sharp burring along the metal top (just run your hand over it and you'll see what I mean) due to poor finishing and poor welding on the racks. I don’t need my skin or dish sponges getting caught on the edges of this thing. They feel heavy duty otherwise but they already hooked one of my nice WS pantry towels and pulled a thread.

Worse yet:
(2) Doesn’t fit in a standard Nordicware half sheet. One of my racks wasn’t even fully rectangular (it was literally shorter along one lateral side than the other), so it didn’t fit in the half sheet. It sat awkwardly and tilted in the pan AND it scratched the crap out of the aluminum. At best, it points to poor quality control, but who wants to find this out by having metal (or worse if you have non-stick bakeware), scratched off of your bakeware?

It appears that most of the other reviews here aren't even talking about this particular rack - they are generalized reviews about how useful half-sheet racks are. Yes, half-sheet racks are extremely useful. But this particular rack in terms of fit, finish, and manufacture is a fail on all counts and you have better options. I would recommend the Checkered Chef brand first, then Nordicware, then USA Pan (for a non-stick option). None of those racks even remotely have these issues and they’re at similar price points. Now I have to try to unsnag my dish towel AND buff out the divots on my half sheet. Ugh. Just avoid.
