About the Author

An honors graduate of Harvard College with a degree in Applied Mathematics and Economics, JOANNE CHANG left a career as a management consultant to enter the world of professional cooking. She started at Boston’s renowned Biba, then Bentonwood Bakery, Rialto, and New York’s Payard Patisserie and Bistro, and finally Mistral. She returned to Boston with dreams of opening her own pastry shop. In 2000, she opened Flour, a bakery and café, and has since opened seven more locations in Boston and Cambridge. Flour has been featured in Gourmet, Food & Wine, Bon Appétit, the New York Times, and Condé Nast Traveler and has received numerous Best of Boston awards. Chang also competed, and won, on Throwdown with Bobby Flay. In 2007, she opened a Chinese restaurant, Myers+Chang, with her husband, Christopher Myers. She is the author of four other cookbooks and was the recipient of a James Beard Award in 2016 for Outstanding Baker in America.

An honors graduate of Harvard College with a degree in Applied Mathematics and Economics, Joanne left a career as a management consultant to enter the world of professional cooking.

She started as garde-manger cook at Boston's renowned Biba restaurant, then worked as a pastry cook at Bentonwood Bakery in Newton, and in 1995 was hired as Pastry Chef at Rialto restaurant in Cambridge.

Joanne moved to New York City in 1997 to work in the cake department of the critically acclaimed Payard Patisserie and Bistro. Returning to Boston a year later with dreams of opening up her own pastry shop, she brought her French and American training to Mistral where she was the Pastry Chef until summer of 2000.

In 2000, she opened Flour, a bakery and café, in Boston's South End. Flour features breakfast pastries, breads, cakes, cookies, and tarts as well as sandwiches, soups, and salads. Flour now has 8 locations in Boston and Cambridge.

Flour has been featured in Food&Wine, Bon Appetit, the New York Times, Conde Nast Traveler, Inc. Magazine, and Boston Magazine and has received numerous Best of Boston awards. Flour was also featured on Throwdown with Bobby Flay on the Food Network in which Joanne's sticky buns won over Chef Flay's. Joanne is the recipient of the James Beard Award for Outstanding Baker in 2016.

Joanne's energetic commitment to excellence extends beyond the kitchen. She writes pastry articles and reviews cookbooks for Fine Cooking magazine. She teaches classes and advises pastry cooks both within the bakery and at area cooking schools. She opened a Chinese restaurant called Myers + Chang with her husband Christopher Myers in the South End neighborhood in the fall of 2007. An avid runner, she competed in every Boston Marathon from 1991 - 2006. She is the author of the cookbook "Flour", "Flour Too", "Baking with Less Sugar", "Myers+Chang at Home", and "Pastry Love".

Best Pastry Cookbook of the Decade!!!

Like the title says, it very evident that Ms. Chang loves creating and making pastries, and wants nothing more than to share that love and knowledge with her customers and readers. The background story for each recipe explains how the recipe was developed, giving full credit to the creator. This, to me, marks an individual who is not only humble, but wants to give where credit is due and bring others up along with her. She clearly knows she did not build her beloved and thriving business on her own, and her loyal team seems to have been with her for years. I’ve made about a dozen recipes thus far (Alina’s milk bread, ciabatta, chocolate chip cookie, double chocolate rye cookie, and strawberry chiffon cake to name a few) and I have yet to be disappointed. Her instructions are clear, easy to follow, and accurate. I’ve lacked in execution where more practice is needed ( in terms of presentation), but the taste is spot on. It’s made intimidating pastries seem more than approachable and do-able, and given me more confidence that if I can just get my hands on the right ingredients, I can make/bake anything. The pictures are gorgeous and the recipes are inventive, incorporating so many alternative flours, whole grains, as well as vegan and gluten free options. Since it’s been difficult to go out to bakeries during quarantine (not that there’s anything comparable to Flour Bakery where I live), it’s been so rewarding, fun, and delicious to bake from home. This book is for all levels of bakers. She provides ample instructions for the beginner to follow, but also gives easy to follow directions for more complex recipes for sophisticated pastries, making readers want to attempt them rather than shy away from. I am so impressed with how this book has inspired me to bake almost daily, making this time of isolation so much more enjoyable. You won’t regret buying this book. This is the best pastry/dessert book I’ve purchased in the last decade. You will learn so much and become super impressed with your newfound skills. Plus, if you can share any of your baked goods (provided you don’t eat it all), your friends and family will be super impressed.

I love this book already! I’ve had it for a
day and have already made two of the cookies - waiting for the snow to stop so that I can go out to get ingredients for more.

While someone below took off stars for it, I love the fact that there are different, non-white flours included in the recipes. In the recipes I tried and also the treats I’ve gotten from the Flour bakeries in Boston, I can sense that they are not included just to be “healthy,” but so that they add another dimension of flavor. I also appreciate the vegan/gluten-free recipes included in the book. While I don’t have any dietary restrictions, I
think Joanne nails it on the head by including them
because this way I can share “Pastry Love” with my friends that do, too (and just to be clear, there are around 10 recipes in here that are explicitly described as so, out of the 120+? recipes.)

The recipes are clearly written, with beautiful pictures, and her lovely personality is bursting through the pages. One huge thing I noticed is how much credit she gives to others on the Flour team - as someone trying to work their way up in the restaurant industry, seeing someone like this is hugely inspiring.

I could write more, but don’t want to let the cookies burn!

Pastry Love is beautifully written, and I can tell that Joanne really put her heart into this book as she described what "pastry love" means to her: giving the pastries that little extra touch on the pastry counter for customers to think 'wow! I want that!' The photographer clearly understood that as well because each photo makes me say 'wow! I want to make that!' and I did!

I've made the mixed nut whole grain biscotti, almond joy tart, almond pistachio cherry honey nougat, devil dogs, whole grain breakfast cookie, and honeycomb.

I am an experienced baker and found a lot of these recipes to be excitingly new, delicious, and my coworkers are raving about the everything I bring in to share with them. The directions are clearly written with easy to follow instructions. I really like the diversity of the recipes (traditional, vegan, gluten free, whole grain) because if I didn't know that they were vegan, gf, or whole grain, I would have no idea and think that I was simply eating something decadent. I love that Joanne has created healthy recipes that absolutely do not taste "healthy" - they are quite delicious actually.

This book is perfect for all levels of baking (beginner to advanced) and will elevate your skills in some way or another. I can tell my own are already growing just by trying things I've not made before because I didn't have a book that could teach me so easily that (nougat, for example) is quite doable. I haven't made the spelt croissants yet, but love the photo illustrations on the process make the process less intimidating.

Pastry Love would be a wonderful addition to anyone's cookbook shelf, but the baker in your life would particularly thank you.

Joanne's book is absolutely beautiful and was clearly made with love. As a home baker looking to master foundational pastry techniques and then getting all sorts of creative with them, this books serves as the kind of textbook I ACTUALLY want to read (like... I literally read this as my bedtime book...)

Each recipe includes a gorgeous full page photo, ingredient measurements in both grams and volume, and the instructions are very clear. The kinds of recipes are super diverse- from familiar items like breads, cakes, pies and cookies, to more challenging items like profiteroles, pavlovas, and kouigns amann. I also appreciate the inclusion of a couple dietary-accommodating recipes- considering the book is over 450 pages, I don't mind having a few recipes that I can make for my gf/vegan friends.

A sweet or funny anecdote is included for each recipe in which Joanne talks about the inspiration behind a recipe or graciously credits her bakers that helped develop them. I've seen many of the treats in this book also in photos of the Flour bakeshop's display case- so I'm confident that each recipe has undergone the rigorous testing before ending up in these pages.

My only pang of sadness is that unfortunately the book was delivered with a slightly torn binding. That being said, this book will be covered in sticky notes and kitchen crumbs in no time, so I'll get over it.

Nothing to dislike. Recipes work. Some are more challenging than others. Read the front of the book with advice on ingredients, equipment and hints first of all and go for it.My daughter made more of the recipes than me. Some are vegan and/or gluten free. All of Joanne Changs recipe books are great. The bakeries are worth visiting too.
