Pesto Spinach Flatbread

Place flour, cream cheese, and mozzarella in a large microwave-safe bowl. Place into microwave on high 45 seconds, then stir.
Fold in spinach and microwave an additional 15 seconds. Stir until a soft dough ball forms.
Cut two pieces of parchment paper to fit air fryer basket. Separate dough into two sections and press each out on ungreased parchment to create 6” rounds.
Spread 1 tablespoon pesto over each flatbread and place into ungreased air fryer basket. Adjust the temperature to 350°F and set the timer for 8 minutes, turning crusts halfway through cooking. Flatbread will be golden when done.
Let cool 5 minutes before slicing and serving.

1 cup blanched finely ground almond flour
2 ounces cream cheese
2 cups shredded mozzarella cheese
1 cup chopped fresh spinach leaves
2 tablespoons basil pesto

The book: explains Keto and Air Frying to start. Staples you need; a really nice intro to the book. The recipes themselves all sound amazing! They use 5 ingredients as stated; very easy and simple. Every recipe has nutritional values listed-which you don’t always get and is greatly appreciated! I am pretty basic with my cooking and these recipes are fast and easy... and sound delicious! I am so glad I picked this book-I feel like it was tailor-made just for me! I will update when I try some recipes! Thank you Amazon ... and the author!

This book has some great recipes. I really like the format of the book with the table of contents and index. I Love that it tells me the calorie and carb information on the page. Only disappointment was that there is not a picture for every recipe. When I looked at it online all of the pages it showed you had pictures. So I assumed that all of the recipes would come with pictures. However there are lots of pictures just not every recipe has pictures which is really what I was looking for. However I will keep this book and would have gave it a 5 if there were pictures for every recipe.

They aren't difficult to make and my whole family will eat them. The cinnamon rolls alone worth the price of the book. The ingredients used are mostly things I have on hand and are easy to modify to suit my family's tastes. We aren't Keto, but there are 2 diabetics in my family and this book is full of great ideas to make meals that are healthy and low carb.

Well I’ll tell you what... MOTIVATION. We spent the quarantine watching alarming amounts of Netflix and ordering Grub Hub. Sometimes I didn’t even like the delivery food (omelettes and pancakes don’t travel well) but down the gullet it went.

Miraculously I did not gain any weight. I credit sleeping 10-12 hours a day and crippling anxiety as the best diet tips of 2020. So now back to work and time to use this cookbook. I’ll update when that happens. The audacity of hope, indeed.

Have used it everyday since getting it about a month ago, really useful quick easy meals, snacks and baking, Not just for Keto diet, recipes are simple, super tasty and most ingredients easily found locally or here on Amazon, it’s American but conversions are simple ( Alexa, what’s 325 degrees Fahrenheit in centigrade?) my favourite so far is pecan crusted chicken tenders, I use thighs cut up into chunky strips and toast pecans in air fryer for a couple of minutes then blast them in a Smoothie blender cup to make the crumb... ohmGee, I serve like a burger but with a lettuce wrap.. made myself drool now. Seriously, get this book, Airfryers are fir more than just chips! You
