We needed to replace an old pan we've been using for about 10 years and was in serious need of replacement. After doing a lot of searching online, I narrowed it down to about 3 different pans. What I really needed was a multi-purpose pan. Something I could use to saute various types of meat, make one-pan dishes, cook eggs and pancakes for breakfast. I had hoped to find a pan with a true hard-anodized non-stick coating, but I wasn't having any luck. Having been turned off by earlier versions of Teflon, I really wasn't too keen on going down that path again. Yet the reviews of the newest non-stick coatings sounded promising. I decided to give this pan a try since I'm already a fan of Calphalon.

This is a large pan. I selected the 12-inch model. Looking back now, I probably would have purchased a slightly smaller version. Considering the size, it's not too heavy. The stay-cool handle is long enough to allow 2 hands to hold the weight of a fully-loaded pan. While I would have liked a handle on both sides of the pan, I can deal with it as is. The glass lid adds even more weight, but that's due to the heavy-duty quality of the lid.

I've had this pan for a couple of months now and cooked everything I noted above in it. Although I'm still adjusting to a pan that's a few inches larger than my old pan, it's not been too difficult to make the change. One thing that makes the size of this pan nice is that whether you're sauteing chicken and vegetables, making toasted cheese sandwiches, cooking pancakes or frying burgers or eggs, there is plenty of room to allow you to cook larger servings all at one time. We like to cook for multiple nights, leaving leftovers for the next day. It also allows us to get the cooking done sooner. Considering the size of the cooking surface, I also have to note how evenly this pan heats and how well it holds heat. Even though it's not as heavy duty as a cast iron skillet, it holds heat well with no real hot spots. The surface currently releases very well, and cleans up very quickly.

This non-stick surface is unlike others I've had before. It works very well so far, though I do expect the performance of the non-stick surface is going to drop over time. That said, I am following some suggestions from others that will help to extend the life of the non-stick coating. Here are some suggestions:

1. If you need oil, don't use non-stick cooking spray (such as Pam) on this pan - rather, get a oil sprayer like the Misto, and load it with olive or vegetable oil. Using spray oils like Pam can leave residues on non-stick surfaces that will build up over time, making the surface sticky. I wish I would have known this sooner so I could have protected some of my other pans from this problem.

2. Be sure to heat your pan only to medium, maybe to medium-high max - never to high. High temps can damage the surface and can cause the chemical release problems that have sometimes been associated with non-stick coatings. If you need to cook on high heat, say for searing a steak, consider using a cast iron skillet instead, and save this pan for the lower temp cooking.

3. Though you probably already know this, don't use metal of any kind on the non-stick surface. I also avoid wood or any other kind of hard material. I stick with nylon tools on this surface. It shows some signs of very minor surface scratches, but nothing that I would consider damage to the integrity of the surface itself.

4. If possible, store it with the lid on it to protect the surface. Otherwise, hang it up or, if you have to store it with other pans stacked on it, place a soft cloth, like a dish cloth, on the pan first.

So, for me, the pan is a win. I expect to use it for many years. My only suggestion is that if you're unaccustomed to a large pan, stick with a slightly smaller size, maybe 10". If you have a larger family, you will likely find the 12" size very useful.

I purchased this pan as a gift for my husband, as he likes to do the cooking (God Bless him, because I hate cooking and my food is inedible, LOL) but the tradeoff is that I get to do the cleanup. This pan has a good balance between handle and pan, which means the pan won't fall over due to the handle being too heavy. The only thing he misses is the "helper" handle at the other end. Our old large Calphalon fry pan has that and it was nice, however that pan's non stick coating was wearing off and the problem was starting to escalate. We have only always used plastic utensils on that pan and always only hand washed it, and the coating started scratching pretty immediately and then peeling off. It had a ten year warranty. The pan was only 3 years old, receipt and box long gone. This is something I worried about when purchasing a new Calphalon but I'm taking my chances with the new coating technology and hoping for the best.

The coating has a super slick surface and both the inside and out have the non stick coating. Handle uses rivets to hold handle on which makes it more difficult to clean, but really, it's no big deal as the slickness of the pan makes cleanup a not so difficult chore. Foods don't stick. They slide right out.

According to my husband there are no hot spots when cooking with the pan. The super flat bottom works perfectly on our glass top stove. The glass cover fits well but in all honesty, the covers of these pans add 20.00 to the price of the Calphalon pans and since we still have the stainless cover from the old pan that would have worked just as well, I could have purchased just the pan without the cover. Heck, I am still trying to get him to throw out the old pan. He likes to hold on to things. Sigh.

He's very happy with this pan. We take good care of our pans and like I said, we don't throw our good pans in the dishwasher, Although in fairness, we've had an old Revereware pan set for more than 10 years, aren't as careful with them, always put them in the dishwasher and those non stick pans have nary a scratch on them, let alone have the coating peeling off.

But this being a gift I didn't want to cheap out. Overall, he likes this pan very much. Thanks Amazon. Once again, less expensive than all the other online stores. Not sure why I continue to bother to price check. Amazon is always the cheapest and the Prime shipping makes it really nice!

For many years I have used nothing but Calphalon. Recently though, I noticed that a lot of this product is made in other countries. Living in Ohio, where the original Calphalon is made, - Toledo, OH, I was very leery to get a pan like this, that might not be true Calphalon. I have two almost identical grill pans, one from Toledo and one from another country. You definitely can tell the difference, not only in the weight, but in how they perform on the stove. To my surprise, this pan comes from Toledo. It is an excellent product, nice and heavy, and very well made. I have used it for quite a while now. It cooks/fries very evenly, cleans up like a charm, and especially with the glass lid, it lets me watch what I am cooking, without having to lift the lid to check. This is a very large pan! It is described as an "omelette" pan, but as the pan is 12"-inches in diameter, an omelet that size would feed an entire group of people, LOL. Overall, this is an excellent product!

The bad: Heavier and deeper than expected. Approximate weight of a similarly sized (but not deep) iron skillet. Like another reviewer said, it's an omelette pan, but there is no way that you'd actually use it for omelettes unless you like your omelettes about two inches thick.

Overall: It functions very well. Love the fact that it cleans easily. My only complaint is that it's heavy and deeper than I expected. But that's a minor flaw, and the heaviness is probably what makes it durable. So, if you don't care about the weight or depth of the pan, this pan is a great choice.

I bought this as a gift for my mother. She think this skillet is too big, but I believe she will get used to it eventually, because this skillet is easy to manevour though its size is big. and more important, I believe this is from the best non-stick skillet manufacturer. Regarding the health damage from aluminum cookware? I don't worry it too much. It has already been hard anaoized, and in today's world, manufacturers tend to use more resource rich material rather than rare metals for producing. 20 years ago, aluminum cookware is very popular, and considered an advancement of technology since it is light and durable. today's technology is far more advanced than 20 years ago. Also we live in this world, and there is always imperfection. We breath the air, but somebody is smoking, and some industry plant is emitting pollutions to the air. Same logics to our daily life. There is no 100% perfection! With the strict laws and regulations in North Amerian countries, I believe even there is some damage to people's health, it is restricted to minimum stage. At least for this 20 years, I have not heard anyone need to be diagnosed for using aluminum cookware. Today 's technology is advanced enough, but there are still imperfection there, and lots of room need for advancement. Anyhow, human being have thousands years civilization, but there might be tens of thousands years for continous advancement. I don't have the ability to know what the final advanced technology will look like, but I draw conclusion from past histiry, the future will be bright and good.

I use this amazing pan for everything, pancakes, stir frys, and yes omelettes! The non stick pan and excellent quality construction ensure even cooking. It washes up like a dream. I also appreciate the cover and extra large diameter of this pan and find I am using it almost every day, it is such a multi tasker! Calphalon is the standard and that is all I buy now. You will be so glad you added this to your kitchen pan collection.

This is an excellent skillet. While dishwasher safe, it's so easy to clean, that I've found myself usually cleaning it by hand. The skillet and lid are solid and sturdy, and things don't stick to the skillet at all. The only negative thing is that the handle on the lid strikes the bottom of the skillet if one tries to store it upside down in the skillet, which means that one cannot store anything on top of the skillet. It takes up quite a bit of cupboard space to store.
