A wonderful recipe. We have a bottle of Sambal olek in our fridge, but not sure where I can get coconut sugar from. I'll check more thoroughly at the supermarket next time I go there. Thanks Angie, you brighten my cooking days with these delicious dishes.

Another beautiful chicken dish. I love tray bakes as they are so simple and so flavorful. I am so glad you use sambal oelek. It’s one of my favorite chili paste, and it’s so versatile. The cashew in coconut sound absolutely luxurious. David (C&L)
