Growing up (Vietnamese heritage), all the noodles I ate were made from rice. That's mostly what Asian homes have. Now that I'm older and watching my caloric intake, I have to find an alternative to fix my noodle cravings. The texture, to me, is similar to eating seaweed salad. There's a bit of crunch to these and I'm okay with that. Follow the instructions on the back of the bag to prepare them. I ate the whole bag in one sitting. I added sliced cucumber, sliced red bellpepper, cut green onion, sliced white onion, chopped cilantro, 1 cup shredded chicken breast, and 3 tbl ginger dressing (bought in fridge section of grocery store). I'm obsessed with these noodles now and will incorporate them into meals several times a week.

I love these noodles so much!  I make the best raw, vegan alfredo noodles with them.  On their own these noodles basically taste like nothing and have hardly any calories.  The texture is a bit "rubbery", but becomes softer when soaked in water, or used in a recipe like mine.  I have been eating these for years.  They are awesome!  If you want to try my alfredo recipe, here is what I do with these noodles:

Open the bag of noodles and pour a little pure water onto them, then, drain out all the liquid and transfer the noodles into a large bowl, and cut them into much smaller pieces with kitchen scissors.
Then make this alfredo sauce to add to them:

In a high speed blender combine: 
2 cups raw, organic cashews, 
3/4 Cup pure water,
1&1/2 teaspoons (fine) Celtic Grey sea salt, 
a scant 1/2 teaspoon of each of these spices:  organic basil, organic thyme. organic ground black pepper,
1&1/2 Tablespoons organic lemon juice
3/4 teaspoon organic minced garlic

Blend on high in a high-speed blender, use a tamper to keep pushing the ingredients down.  When smooth and mixed well, stop.  Then pour the sauce you just made onto the noodles in your large bowl.  Mix well until evenly mixed.  Scoop into glass containers (I use a canning funnel for less mess/spills, and I scoop it into small glass jars....like a peanut butter sized jar or smaller.)  Store in glass, sealed containers or glass jars in fridge.  This recipe tastes the VERY BEST after 24 hours in the fridge, but can be eaten right away if you like. (See: Last two pics in my review. - They might not look super-appetizing in a jar like I have them in my pics, but they taste GREAT!!!)

The package does not tell you how to properly prepare these which I find frustrating and silly. I had to read these reviews to find out that there is a way to make these noodles soft. You have to boil them and add lemon and baking soda - it seems. Because if you don't - they are like small strands of crunchy nothing that taste like nothing and don' have the texture of noodles at all - more like crunchy nothing/plastic of some kind - YUCK. I threw them out with disgust. So the rating will change once I make these the "secret" way that the company has decided NOT to tell you about on the package when you buy them. C''mon kelp noodle people....don't make me do extra research to use your product...what a waste of my time and my money (since they were so awful I threw them away).

I updated my review to five starts because I found the right way to make them taste like glass noodles - soft and yummy. For each package use 1TBS baking soda and 2TBS lemon. Put the lemon and baking soda together (see the bubbly chemical reaction) then put the glass noodles in there and get them coated in the stuff. Last add hot water to it and let it sit for 8 minutes. Perfect noodle! The company NEEDS TO UPDATE THE DIRECTIONS ON THE PACKAGE!!! Without these steps, these are awful.

I am not sure if the Green Tea version adds any real nutrients, but any of the Sea Tangle Kelp Noodles work great in stir fry!

When they are pulled out of the package, the whole lump of noodles comes out at once. The directions on the package state to rinse twice before adding them to a dish. I am lazy; I have poured the water out of the bag and then filled it again once and drained. I have noticed no difference it taste by refilling rather than rinsing twice, and it saves me from cleaning a collander.

Other users have recommended that you sprinkle baking soda on top to soften the noodles. I did that for a while and preferred to also add lemon to complement the taste with acid. However, it makes the stir fry even saltier, and I realized that adding baking soda is unnecessary for the green tea version. You can try both methods.

After pulling the whole lump out of the original packaging, I simply use a large knife to chop off as much as I want and in the lengths I want and wrap up the rest for the refrigerator. So far the noodles have kept up to a week without change in texture or taste (such as there is).

Face it: these noodles are filler at 6 cal. per serving. However, they take on the taste of the stir fry sauce, and if I add them to napa cabbage, add a softer texture to contrast with the cabbage. I also love adding frozen spinach or collard greens for the dark leafy green look. Spinach + Kelp Noodles = a really smooth feel that slides right down.

Add red bell peppers for color and you have a nice dish for less than 20 cal. per serving without the sauce. Choose your sauce wisely.

I have recently started a raw food diet and was looking for a little variety. I just made a super delicious Indonesian style dish with these. As I'm eating them raw, I followed the instructions. My packet of noodles was moist but it didn't have water in it. All 6 packs are the same color and moisture, so I think if yours don't look the same, or have a vulgar taste, then it's probably a bad batch.

I have recently started a raw food diet and was looking for a little variety. I just made a super delicious Indonesian style dish with these. As I'm eating them raw, I followed the instructions. I soaked 1 package in cold filtered water and untangle them. Strain. In a separate bowl add a cup of filtered water, juice of 1 lemon and a tablespoon of baking soda. I massaged the noodles then let them sit for about 5-8 minutes while I made the sauce. When I returned to them they were very soft, like cooked pasta. I strained, rinsed and strained again... added my sauce, veggies and Viola! These turned out AMAZING!!! I saw some reviews talking about a vulgar taste, but mine had no taste at all. My packet of noodles was moist but it didn't have water in it. All 6 packs are the same color and moisture, so I think if yours don't look the same, or have a vulgar taste, then it's probably a bad batch.

These are SO good. I ordered a pack of the konaberry ones as well and they accidentally got left on the porch overnight and froze and they’re all shriveled and dry now so definitely DO NOT freeze them.

Back to these: AMAZING. I rinsed and massaged them under some lukewarm water until they were all separated and then threw them right into my vegan cheese sauce. They’re so delicious. The texture is unique but not too far off from el dente rice pasta. And the best part is that they’re almost ZERO calories. 6cal per 1/2cup, I’d say the pack is about 2cups so even if you are the whole thing it’s practically nothing. The only downside is how expensive they are.

But if you’re vegan/raw vegan and you’re someone who loves and misses pasta, these are worth splurging on!

They remind me of rice noodles a bit but are more springy and translucent. I made about two stir fries from one pack. (Cooking for one).
They really work for me, they don’t make me bloated and I like the jelly like texture. They are flavourless so they get the flavour from the sauces etc.
They need to be soaked and massaged (in lemon juice and bicarbonate soda mixture with water). After they soften I just add them to already sautéed veggies to warm them up and mix with the rest. So very easy to prepare and I didn’t even follow the exact dosage of bicarbonate soda and lemon juice.
They are gluten free, contain iodin as well as other nutrients so I class them as a healthy alternative to pasta. Albeit a bit pricy.

These are so delicious and full of goodness, not calories! They need good rinsing, then to be marinated in lemon juice and baking soda for 5 minutes, then rinsed again and the texture is perfect! Excellent source of iodine especially for vegans. Very versatile! Highly recommended.
