This homemade version of a popular Chipotle restaurant menu item livens up plain white rice with lime juice and tons of cilantro. Serve it as a side dish or top with cooked vegetables and salsa to make a quick burrito bowl.

Preparation
Step 1
Rinse rice several times with cold water until water runs clear. Drain well in a fine-mesh sieve. Transfer rice to a medium pot. Add salt and 1 1/4 cups water, cover, and bring to a boil over high heat. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, 18–21 minutes.
Step 2
Remove from heat. Let stand, covered and undisturbed, 10 minutes. Use a fork to fluff, then gently fold in cilantro, butter, and lime juice.

You MUST rinse jasmine rice until the water runs clear or your rice will turn out like wallpaper paste. And watch it - jasmine rice is not Uncle Bens - 2 to 1 water to rice is probably too much - but I say add water as needed. Also, I was worried it would be too limey and opted not to double the lime juice when I went to 2 cups of uncooked rice. It needed more lime --- I used lime zest plus juice of one lime for 2 cups rice and it was not enough. Some suggest adding a jasmine tea bag to the cooking water - I may try that next time for more flavor.

I, too, was concerned that 1 1/4 cups water would not be anywhere close to enough. I did use jasmine rice but used 2 cups water. My rice was cooked--but on the gummy side. Maybe the ideal amount is 1 3/4 cups. I like cilantro, so I was disappointed that I could not really taste the cilantro in this when I was done. Would definitely increase it.

Loved this! Reminds me also of the rice at Wahoo's Fish Taco restaurants. Based on the previous reviews about the water ratio in the recipe; I just made the rice in my Instant Pot how I normally would, then added the rest. It turned out great, and everyone loved it. Served with salmon tacos and black beans.

It should be 1 cup rice 2cups water. Some salt 1/4 cup chopped cilantro 2 tablespoons unsalted butter 2 tablespoons lime juce/ put lime peels in with rice at end with lid.

There's a problem with the amount of water for this recipe. Thankfully I checked the rice after about 9 - 10 minutes to find that the water was all absorbed and it had started to stick to the bottom of the saucepan. Had I left it untended per the recipe it would have burnt completely. Should be at least 2 or 2 1/2 cups of water for 1 cup of rice - IMHO. Otherwise, the flavour was great and was a perfect accompaniment to the "Our favorite Meatloaf" recipe.

Excellent. I found that I needed 1 and 3 /4-2 cups of water otherwise the rice would stick. Added more cilantro but we like it and the lime juice is great as well.
