It's a delicate operation and one that requires a stylist who understands how to take off tiny bits of hair strategically without just re-shaping it into the pixie you had before. If you're not super-secure with the one you have, ask around for recommendations. Once you've got a stylist you trust onboard, here are a few little tricks for those inbetween stages.
Tip 1) Invest in cute clips like Victoria Beckham. They come in handy for wayward pieces.
Tip 2) Play with your part. A deep, dramatic part can distract from any wackiness going on in the growing out phase. Plus, it looks pretty chic. See: Rihanna.
Tip 3) Use those ears. Once your hair gets long enough for tucking (like Katie Holmes's here), you've got a really cute style option to turn to.
Tip 4) Play with curls like Michelle Williams. They'll soften up the angles as your hair grows.
