Panko—Japan's flaky, whole breadcrumbs made from white bread—are used extensively in Asian cooking, and are particularly widespread in Japanese recipes. Absorbing less oil and thus able to retain peak crispiness and crunchiness every way they're cooked, panko crumbs come in handy when making the perfect batter for tonkatsu and fried chicken. Although panko is used heavily in Asian finger food recipes, you can drop them in almost anywhere you would normally use breadcrumbs, whether that's mac and cheese or a veggie gratin. From a Japanese tonkatsu burger to classic Scotch eggs and stuffed mushrooms, here are some of our best panko breadcrumbs recipes.
