If you install the game to the hard drive can you play them without the disc? if not what is the benefit of installing games to the hard drive.

No, you cannot play a game without the disc if you install.
The idea of installing games is to speed up loading times, and reduce wear and tear on the disc/drive (and also reduce noise from the console). That is all.
