Lesotho, an enclave surrounded by South Africa, has a cuisine that draws on British influence and strong African tradition. Potato-based dishes and desserts reflect the lasting British influence on the Lesothian diet, while mealie pap (maize porridge) and peanut-based stews link the country with the rest of its neighbors. While tasty and full of flavor, the food in Lesotho is not as spicy as in other African countries.

Most meals consist of meat or seafood, rice and vegetables. Beetroot salad is a popular side dish. Other specialties include oxtail stew, peanut-based stew, curries and kebabs. Heavy sauces are typically a component to any dish.

Ginger beer is the alcoholic beverage of Lesotho, but there are many local brews to choose from. Ting (fermented porridge) is another common drink.—Alexandra Menglide
