Overview

The Canadian maple syrup industry produces approximately 80% of the world’s pure maple syrup and is the leading global producer of maple products.

The province of Quebec alone accounts for 90.8% of the country’s maple syrup production. A late spring caused the production to fall for the second consecutive year in 2015. Canada produced 8,908 gallons of maple syrup in 2015, down 6.5% from 2014; the value of maple products declined 6.1% to $358 million. Maple syrup production also dropped in 2014 by 5.6%, compared with 2013, primarily due to weather-related factors in certain regions. 

Canada is the world’s largest exporter of maple products, with exports valued at $360 million in 2015. Quebec accounted for 94.3% of Canadian maple product exports and New Brunswick for 4.9%, with the remaining maple-producing provinces (as listed in Table 2.1.1.) accounting for only 0.8% of total exports. In 2015, 63.7% of Canadian exports went to the United States, 8.6% to Germany and 7.3% to Japan, with the other export destinations (as listed in Table 2.1.4.) accounting for 20.3% of total exports.
