What a weird concept. I am glad that I never noticed this "delicacy" when in Taiwan. Hopefully they get rid of the idea.

How can that be sanitary?

I can see someone picking the old chicken bones out of the garbage in Taiwan, scaping them off and shoving them in the sausage to distribute the cost of garbage collection onto the consumer, but I find it hard to believe the Japanese would go for such an idea.

*gasp*!! Old recycled chicken bones! That will be the next big food scandal in Taiwan. I'm sure someone out there has already put the plan into action.

I get squeamish about bones in chicken wings. Chicken bones in sausages? Well, "fear and loathing" ought to describe my reaction. . .

(BTW: I linked here from Notes of a former Native Speaker. Your blog is worth the trip :)
