For those of us who grew up in the south in the 40's through the 70's, this was a staple at the breakfast table. We did not have it everyday but when we did it was a treat.
The secret to making this sausage taste right is in how you prepare it. First, don't use a pan that will allow the sausage to stick. Use either a well seasoned cast iron skillet or a non-stick frying pan. Heat it until the sausage turns light brown and starts to stiffen. Basically, cook most of the moisture out of it. If you are going to scramble eggs into the cooked sausage, mix between 4 and six into the pan. Don't over stir the eggs or they will be mealy or crumbly. Again, the secret is too brown the sausage for the best taste.
Lastly, this sausage may not be meant for everyone.
It can also be used as a filler / flavoring mixed with eggs, 2 parts almond flour, 1 part chickpea flour, baking powder, other seasonings like dry mustard and 21 seasoning, a little olive oil making a slightly wet pancake like batter, pouring into hotdog bun molds, then sharp cheddar cheese added on top and gently worked into the batter. Microwave until stiff in the middle, then cooking in an air fryer at about 350 degrees F for 10 or 11 minutes. Great little breakfast sausage and cheese breakfast cakes. They then can be frozen and reheated in the microwave for about a 30 seconds following food safety rules.
Out of the can just heated up? It's loose meat. And you know what? What it 100% reminds me of is CORNED BEEF HASH, without the potato cubes. Or sausage hash (this uses chicken and pork). If you have had that, then you know that the consistency is just like slop. A bizarrely delicious slop. Not a go to item but it adds variety to a pantry, to camping supplies, to emergency pantry.
I really dont mind this at all. Great addition to my preps and for times I want to make add extra "meat" (lol) to a can of hash, or can grab a can of potatoes (or grab a potato) and make a quick hash. Or use it to flavor something. Just know it has a canned corned beef hash vibe. I'd even consider sharing this with my labs, but the sodium content is high. I will instead stick with their 100% pork that I keep in preps for them just pork cooked in can
Anyway, I wont stock pile this stuff, but it is a welcome addition to my pantry, and I plan to buy some more. It is really not that bad!
Edit to fix typos, and to say that I though this was worth it when it was around $13 for the pack (march & april 2022), even $15. But now it jumped to $34 in a matter of a couple of days? Unless desperate, no. I know canned meat has jumped significantly, but yeesh. Rating stays same because I dont rate on price.
